Sharpening
Blade-sharpening service includes minor chip and tip repairs, sharpening to very sharp, bringing the bevel to an angle appropriate to the blades’ intended use, and polishing.
Restoration & Repair
When knives, handles, and other tools need special attention, like thinning, major repairs, and restoration of old or mistreated knives, Sharp Old Goat Cutlery is the best place to take them in southern Montana. Restoration can include cleaning, rust and discoloration removal, repair of bent blades, major blade chipping and broken knife tips, edge reprofiling (including blade thinning), and handle restoration or replacement.
How it Works
Sharp Old Goat focuses on residential customers, culinary industry workers and food-oriented businesses.
We do business in four primary ways:
Drop Off
Drop off is available ANYTIME. Just contact us via text, phone, or email to schedule and receive instructions for drop-off blades that need attention. We can receive the items for service in person or via our available anytime lockbox. Customers can expect the service to be completed within one to two days in most cases.
Pick Up / Delivery
For an additional cost we would be happy to pick up and deliver your items for servicing. This can be arranged via phone, text or email.
On Site / Mobile
We will go to the location of your choice and use our mobile sharpening setup to provide on-site services, either per item or at an hourly rate, with travel costs considered as well. Call or email us to arrange a service that meets your needs (e.g. onsite sharpening at markets, parties/ festivals, food trucks, brick and mortar locations, etc.)
Mail-in Instructions
Items for sharpening or restoration should be wrapped to protect them and prevent them from cutting through the packaging and injuring someone. They can then be shipped to our new workshop address (Sharp Old Goat Cutlery, c/o Clayton Williams, 738 Hwy 10 W, Livingston, MT 59047). Name, email, number of items, return address and phone number must accompany the items for service. Within a day or two, we will complete the work and send you an invoice by email or text that includes payment options. A flat fee of $10 will be added for return shipping. Once we receive payment, we will ship the items back via UPS Ground.

Our Method
There are 5 steps we follow with each blade:
Blade assessment
First, we do a thorough cleaning and assessment.
Plan development
Determine goals and outline a plan for services based on customer preference and condition requirements (e.g. reprofiling, chip and/or tip repair, blade straightening, thinning of secondary bevel). If damage is severe, additional restoration and repair services may be required.
Primary Edge
Determine angle, raise burr, progress through coarse-to -fine progression using a variety of tools to achieve the desired level of sharpness. Major reshaping or reprofiling is an Advanced service.
Hone/strop primary edge
Burr removal (a burr is a tiny, curled-over piece of metal that forms at the edge of a knife blade as it is sharpened—not achieving a burr on both sides and throughout the length of the blade is the most common reason “sharpened” knives do not come out sharp)
Polish
When indicated, remove microscopic “teeth” and create a smooth primary edge and bevel; polish bevel and create a satin finish on the blade
