Minamoto Sukehisa Gyuto

A vintage 210 mm gyuto stamped Minamoto Sukehisa 特製, a Tokyo-marked trade line from the Showa era. Forged from high-carbon steel (not stainless), it takes a very keen edge and develops a protective patina with use. The blade has a clean, symmetrical double-bevel grind with brisk distal taper to a precise tip, ideal for all-around prep from fine veg work to proteins. A full-tang Western (yo) handle with brass pins gives a secure, familiar grip and neutral balance for comfortable daily use.
