A classic 185 mm nakiri from Echizen/Takefu, Fukui—one of Japan’s oldest knife-making centers. Forged with a White Paper (Shirogami) high-carbon core in traditional kasumi construction, it takes a laser-keen edge and develops a handsome patina with use. Tall, flat profile and thin double-bevel geometry make it a glide-through vegetable knife for clean push cuts, julienne, and precise square dice. Lightweight wa handle with resin ferrule keeps balance forward for effortless board work.
